3 cups cooked basmati rice
1 chopped onion
1 teaspoon Curry powder
1/2 sweet red pepper diced
1 large grated carrot
1/2 cup frozen peas still frozen
Saute onion and red pepper in butter until onion is tender. Add carrots and peas. Stir for a minute. Add curry powder and mix well. Add in rice. Toss to mix and heat through.
