Exceptional Bean Pie

Bean Pie

  • 1 tablespoon vegetable oil

  • 1 medium sweet Vidalia onion chopped

  • 1 small sweet red pepper, chopped

  • 2 cans (15 ounce size) white navy or pinto beans, drained

  • 1/3 cup salsa

  • 1/4 cup chopped red bell pepper

  • 1/3 cup chilli sauce or ketchup

  • 1/4 teaspoon cayenne pepper

  • 1/4 teaspoon ground black pepper

  • salt to taste

  • 2 unbaked pie crusts (9 inch)

  • 1 1/2 cup shredded Monterey Jack cheese

Preheat the oven to 325 degrees F. Heat the oil in a fry pan and sauté the onions and peppers until the onion is transparent. Add the rest of the ingredients except the cheese and simmer gently for 15 minutes. Remove from heat. Fill the pie shell with half of the mixture. Top with half of the cheese. Put the rest of the bean mix on top and top with the remaining cheese. Gently add the top crust and seal edges. Cut a hole in the middle. Bake for 1 hours or until the pie is a nice golden brown.
